Equipment
- Sharp knife
- Melon baller
- Mixing bowls
- Electric mixer
- Piping bag
- Spoon
- Measuring cups and spoons
- Cutting board
- Serving tray or platter
Ingredients
- 18-24 large strawberries
- 1 cup heavy whipping cream
- 8 oz package cream cheese (softened)
- ⅔ cup white granulated sugar
- 1 tbp vanilla extract
- 1 tbsp fresh lemon juice
- ½ cups graham cracker crumbs
Instructions
Prep the strawberries:
- Cut off the stems and slice strawberries in half.
- Cut a small sliver off the back of each strawberry half so they sit upright.
Hollow out the strawberries:
- Use a small melon baller to gently scoop out a small indent from the center of each strawberry half, enough to hold the filling.
Whip the cream:
- In a medium bowl, beat the heavy whipping cream until stiff peaks form (about 5 minutes).
Make the cheesecake filling:
- In a separate bowl, combine softened cream cheese, sugar, vanilla extract, and lemon juice (if using).
- Mix with an electric mixer until smooth and creamy.
Fold in the whipped cream:
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Fill the strawberries:
- Fill a piping bag with the cheesecake filling (a star tip works great for presentation).
- Pipe the cheesecake mixture onto each hollowed-out strawberry.
Top with graham cracker crumbs:
- Sprinkle a small amount of graham cracker crumbs on top of the filled strawberries for a cheesecake crust effect.
Serve and enjoy!
- These strawberries are perfect as a dessert or appetizer for any occasion!
Notes
- Strawberry Size: Use large strawberries to ensure they can hold enough filling. If your strawberries are smaller, you may need to adjust the filling amount.
- Make Ahead: You can prepare the cheesecake filling ahead of time and store it in the refrigerator for up to 2 days. However, fill the strawberries just before serving to prevent them from becoming soggy.
- Filling Tip: For a smoother filling, make sure the cream cheese is softened completely before mixing. This helps avoid lumps.

Is there sour cream in this recipe?
It says to combine sour cream but doesn’t have an amount that is used?
Apologies to the community. The sour cream was added by mistake. No sour cream is used in this recipe. It has been removed from the recipe card.
